Paprika has been a staple in Portuguese cooking for generations. While many people associate paprika with Spanish cuisine, it also plays a major role in Portuguese kitchens where it’s used to season everything from grilled chicken and roasted meats to chouriço marinades and seafood stews. The spice originally made its way to Europe through trade routes centuries ago and quickly became popular in Portugal because of the way it adds warmth, color, and deep savory flavor to food.
Growing up around Portuguese food, paprika was always one of those flavors that showed up everywhere. It’s simple, but when it’s used the right way it builds incredible depth in a dish.
As I started cooking more over the years, I also fell in love with Asian ingredients like gochujang, soy sauce, and cooking wines. Those ingredients bring an entirely different layer of flavor, umami, heat, and richness that works surprisingly well with paprika.
This creamy paprika chicken sandwich is my way of bringing those two worlds together. The crispy chicken thighs get coated in a creamy paprika sauce with a touch of gochujang for heat and depth. To balance that richness, the sandwich is topped with a bright cucumber salad dressed with lemon, honey, and everything bagel seasoning.
Great food is always about balance. You want richness, acidity, spice, freshness, and texture all working together. The creamy sauce, crispy chicken, and citrusy cucumber salad make this sandwich hit all those notes in one bite.
