Homemade Taco Seasoning (for 1 lb ground beef)

Ingredients:

  • 3 tbsp cumin
  • 2 tbsp chili powder
  • ½ tbsp onion powder
  • 1 tbsp garlic powder
  • 1 tbsp paprika
  • 1 tbsp salt

Mix everything in a small bowl. Use the entire batch for 1 pound of ground beef — it’ll bloom beautifully in the rendered fat for deep, earthy flavor.

Beef Taco Filling

Ingredients:

  • 1 lb ground beef (80/20)
  • All of the seasoning mix above
  • 8 small corn or flour tortillas
  • 1½ cups shredded cheese (cheddar, Monterey Jack, or blend)
  • Avocado or olive oil spray

Optional toppings: shredded lettuce, diced tomatoes, avocado, sour cream, cilantro, lime wedges

Instructions

1. Cook the Beef (No Water)

  • Heat a skillet over medium-high heat.
  • Add ground beef and brown for 6–7 minutes, breaking it apart as it cooks.
  • Drain most of the fat, leaving a small amount for flavor.
  • Add the entire spice blend and stir well to coat the meat.
  • Cook another 1–2 minutes so the spices bloom and stick to the beef. Remove from heat.

2. Assemble the Tacos (Cheese–Beef–Cheese Method)

  • Lay out tortillas on a clean surface.
  • Sprinkle a thin layer of cheese on one half of each tortilla — this protects the bottom from getting soggy.
  • Spoon about 2 tbsp of the seasoned beef over the cheese.
  • Add another small layer of cheese on top of the beef.
  • Fold the tortilla in half and gently press to seal.
  • Spray both sides with avocado or olive oil spray.

3. Air Fry

  • Preheat the air fryer to 375°F (190°C) .
  • Arrange tacos in a single layer (work in batches).
  • Air fry for 6–8 minutes , flipping halfway, until golden and crisp.
  • Let cool slightly before serving.

Roasted Tomatillo–Tomato Salsa

Ingredients:

  • 4 tomatillos (husks removed)
  • 2 Roma tomatoes
  • 2 jalapeños
  • 2 Fresno peppers
  • 1 small red onion (quartered)
  • 2 garlic cloves (optional)
  • 1 tbsp olive oil
  • Juice of 1 lime
  • Salt to taste
  • Small handful of cilantro (optional)

Instructions:

  1. Toss tomatillos, tomatoes, peppers, onion, and garlic with olive oil.
  2. Air fry at 400°F (204°C) for 10–12 minutes (or roast at 425°F for 15 minutes) until blistered.
  3. Add roasted veggies to a blender with lime juice, cilantro, and salt.
  4. Blend until smooth or slightly chunky.
  5. Taste and adjust lime or salt to balance the acidity.

Pro Tips

  • Slightly warm tortillas before assembling to prevent cracking.
  • The salsa doubles as an amazing dip for chips or topping for grilled chicken.
