Air Fryer Ground Beef Tacos with Homemade Seasoning and Roasted Tomatillo Salsa | Donaldo Cooks

Ingredients

Homemade Taco Seasoning (for 1 lb ground beef)
  • 3 tbsp cumin
  • 2 tbsp chili powder
  • ½ tbsp onion powder
  • 1 tbsp garlic powder
  • 1 tbsp paprika
  • 1 tbsp salt
Ingredients
  • 1 lb ground beef (80/20)
  • All of the seasoning mix above
  • 8 small corn or flour tortillas
  • 1½ cups shredded cheese (cheddar, Monterey Jack, or blend)
  • Avocado or olive oil spray
  • 4 tomatillos (husks removed)
  • 2 Roma tomatoes
  • 2 jalapeños
  • 2 Fresno peppers
  • 1 small red onion (quartered)
  • 2 garlic cloves (optional)
  • 1 tbsp olive oil
  • Juice of 1 lime
  • Salt to taste
  • Small handful of cilantro (optional)

Method

1. Cook the Beef (No Water)
  1. Heat a skillet over medium-high heat.
  2. Add ground beef and brown for 6–7 minutes, breaking it apart as it cooks.
  3. Drain most of the fat, leaving a small amount for flavor.
  4. Add the entire spice blend and stir well to coat the meat.
  5. Cook another 1–2 minutes so the spices bloom and stick to the beef. Remove from heat.
2. Assemble the Tacos (Cheese–Beef–Cheese Method)
  1. Lay out tortillas on a clean surface.
  2. Sprinkle a thin layer of cheese on one half of each tortilla — this protects the bottom from getting soggy.
  3. Spoon about 2 tbsp of the seasoned beef over the cheese.
  4. Add another small layer of cheese on top of the beef.
  5. Fold the tortilla in half and gently press to seal.
  6. Spray both sides with avocado or olive oil spray.
3. Air Fry
  1. Preheat the air fryer to 375°F (190°C) .
  2. Arrange tacos in a single layer (work in batches).
  3. Air fry for 6–8 minutes , flipping halfway, until golden and crisp.
  4. Let cool slightly before serving.
Instructions
  1. Toss tomatillos, tomatoes, peppers, onion, and garlic with olive oil.
  2. Air fry at 400°F (204°C) for 10–12 minutes (or roast at 425°F for 15 minutes) until blistered.
  3. Add roasted veggies to a blender with lime juice, cilantro, and salt.
  4. Blend until smooth or slightly chunky.
  5. Taste and adjust lime or salt to balance the acidity.
