Cook Time 1 hour 30 minutes
Rest Time 10 minutes
Total Time 2 hours
Servings: 8

Ingredients

Monster Meatloaf Mix
  • 3 lbs ground beef (90% lean / 10% fat)
  • 1 cup panko breadcrumbs
  • 2 large eggs
  • 1 tbsp ground cumin
  • 1 tbsp salt
  • 1 tbsp black pepper
  • 1 tbsp onion powder
Ketchup Glaze
  • ½ cup ketchup, approximately, for glazing
Foot Details
  • 1 large onion, cut into five small pieces for toenails and one thick piece for the ankle bone

Method

Step 1: Prepare the Meatloaf Mixture
  1. Add the 90/10 ground beef, panko breadcrumbs, eggs, cumin, salt, black pepper, and onion powder to a large mixing bowl.
  2. Using your hands or a sturdy spoon, gently mix everything until just combined.
  3. Avoid overmixing, which can make the meatloaf dense.
Step 2: Shape the Monster Foot
  1. Line a smoker-safe sheet pan with parchment paper rated for the cooking temperature.
  2. Transfer the meatloaf mixture onto the pan and shape it into a long foot.
  3. Make one end wider to resemble the heel, then taper the opposite end toward the toes.
  4. Form five individual toes at the front of the foot, making the big toe slightly larger.
  5. Press a thin piece of onion into each toe to create a toenail.
  6. Place a thick chunk of onion into the ankle area to resemble an exposed bone.
  7. If needed, secure the ankle detail with a food-safe skewer.
  8. Place the shaped foot in the refrigerator while the smoker preheats.
Step 3: Preheat the Smoker
  1. Preheat your smoker to 300°F.
  2. Choose your preferred smoking wood, such as hickory, apple, or cherry.
Step 4: Smoke the Meatloaf
  1. Place the sheet pan with the monster foot into the smoker.
  2. Cook for approximately 1–1½ hours, or until the internal temperature reaches 160°F in the thickest part of the heel.
  3. Cooking time may vary depending on the thickness of the meatloaf and your smoker. Allow extra time if necessary.
Step 5: Add the Ketchup Glaze
  1. Carefully remove the finished meatloaf from the smoker.
  2. Using a basting brush, spread approximately ½ cup of ketchup over the top and sides of the foot.
  3. Coat the meatloaf generously to create a glossy, creepy appearance.
Step 6: Rest and Serve
  1. Allow the meatloaf to rest for approximately 10 minutes.
  2. Remove any skewer before serving.
  3. Transfer to a serving platter, slice, and serve with your favorite sides.
  4. For the full Halloween effect, start by cutting off one of the toes!

Notes

Donaldo's Tips: Use 90/10 ground beef. I like using 90% lean ground beef for this recipe. It has enough fat to keep the meatloaf juicy without releasing too much grease, which also helps the monster foot hold its shape while smoking.
Donaldo's Tips: Don't overmix the meat. Mix the ground beef, breadcrumbs, eggs, and seasonings just until everything comes together. Overmixing makes meatloaf dense and tough.
Donaldo's Tips: Chill the foot before smoking. Once you've finished shaping the meatloaf, place the entire pan in the refrigerator while the smoker preheats. Cold meat holds its shape better, especially around the toes.
Donaldo's Tips: Take your time shaping the toes. They don't have to be perfect. Actually, slightly uneven toes make the finished meatloaf look even creepier. Just make sure they're firmly attached to the main foot so they don't fall off while cooking.
Donaldo's Tips: Use onion for the toenails. Cut five small, thin pieces of onion and press them into the tops of the toes. As the meatloaf smokes, the onion softens and roasts, giving the foot a surprisingly realistic appearance.
Donaldo's Tips: Save the ketchup for the end. I don't add ketchup to the meat mixture. Instead, I brush it over the cooked meatloaf after it comes off the smoker. This keeps the glaze bright, glossy, and a little disturbing.
Donaldo's Tips: Use a meat thermometer. The heel is usually the thickest part of the foot, so that's where I check the internal temperature. Ground beef needs to reach 160°F.
Donaldo's Tips: Let it rest before slicing. Give the meatloaf about 10 minutes to rest so it holds together when you cut it. Then start by slicing off a toe and watch everyone's reaction.
Ingredient Substitutions: Ground beef: This recipe uses 90/10 ground beef for a good balance of flavor and structure. You can substitute 85/15 ground beef for a richer meatloaf, although it may release more grease. Ground turkey or a beef-and-pork mixture can also work. Ground poultry must reach 165°F internally.
Ingredient Substitutions: Panko breadcrumbs: Regular breadcrumbs or finely crushed crackers work as substitutes. Use gluten-free breadcrumbs if needed.
Ingredient Substitutions: Eggs: Eggs help bind the meatloaf together and keep the foot from falling apart. For an egg-free version, a suitable commercial egg replacer may work, although the finished texture and shape can change.
Ingredient Substitutions: Ground cumin: If you prefer a more traditional meatloaf flavor, replace some or all of the cumin with smoked paprika or your favorite meatloaf seasoning.
Ingredient Substitutions: Onion powder: Finely minced fresh onion can work, but it adds moisture and may affect how well the foot holds its shape.
Ingredient Substitutions: Ketchup: Barbecue sauce makes a delicious alternative if you prefer a sweeter, smokier glaze.
Ingredient Substitutions: Onion toenails: Thin pieces of garlic or radish can be used for a different appearance, although onion is my preferred option.
Spicy Monster Meat Loaf: Add ½–1 teaspoon of cayenne pepper or crushed red pepper flakes to the meat mixture.
Spicy Monster Meat Loaf: You can also mix a little hot sauce into the ketchup glaze for an extra kick.
BBQ Monster Meat Loaf: Swap the ketchup for your favorite barbecue sauce.
BBQ Monster Meat Loaf: The combination of smoked beef and barbecue sauce gives the meatloaf a sweeter, smokier finish.
Bacon-Wrapped Monster Foot: Wrap thin strips of bacon around portions of the foot before smoking.
Bacon-Wrapped Monster Foot: The bacon creates a creepy, textured appearance while adding extra flavor.
Bacon-Wrapped Monster Foot: Keep the toenails exposed so the foot shape remains recognizable, and cook until the center reaches the appropriate safe temperature.
Oven-Baked Monster Meat Loaf: Don't have a smoker?
Oven-Baked Monster Meat Loaf: You can make this Halloween meatloaf in the oven instead.
Oven-Baked Monster Meat Loaf: Bake at 300°F for approximately 1–1½ hours, or until the thickest part reaches 160°F.
Oven-Baked Monster Meat Loaf: You'll miss the smoky flavor, but the presentation will be just as creepy.
Make-Ahead Tips: One of the best things about this recipe is that you can prepare the entire foot ahead of time.
Prepare the Meatloaf Ahead: Mix the ground beef, breadcrumbs, eggs, and seasonings according to the recipe.
Prepare the Meatloaf Ahead: Shape the meatloaf into a foot on your prepared sheet pan, then add the onion toenails and ankle bone.
Prepare the Meatloaf Ahead: Cover and refrigerate for up to 24 hours before cooking.
Prepare the Meatloaf Ahead: Keep the raw meatloaf refrigerated at 40°F or below until you're ready to smoke it.
Prepare the Onion Details: You can slice the onion toenails and prepare the ankle bone ahead of time.
Prepare the Onion Details: Store the pieces in an airtight container in the refrigerator until you're ready to assemble the foot.
Before Serving: Remove the meatloaf from the refrigerator when your smoker is ready.
Before Serving: Smoke until the internal temperature reaches 160°F, brush with ketchup, and allow it to rest before serving.
Before Serving: Preparing the foot ahead of time makes Halloween dinner much easier, especially if you're entertaining guests.
Refrigerating: Store leftover meatloaf in an airtight container in the refrigerator for up to 3–4 days.
Refrigerating: For easier storage, slice the meatloaf into individual portions.
Refrigerating: Refrigerate leftovers within 2 hours of cooking.
Reheating: Place leftover slices in a baking dish, cover loosely with foil, and reheat in a 350°F oven until the center reaches 165°F.
Reheating: You can also reheat individual slices in a skillet over medium-low heat with a splash of water to prevent drying.
Reheating: Brush a little fresh ketchup over the slices before serving if you want to bring back the glossy glaze.
Freezing: Allow the cooked meatloaf to cool before wrapping individual slices tightly in plastic wrap or placing them in freezer-safe containers.
Freezing: Freeze for up to 2–3 months for best quality.
Freezing: Thaw overnight in the refrigerator before reheating.
